The Birth of a Legend: Calvisius

Agroittica’s payoff is “Aquae Optima” — “The Best from Water,” a perfect synthesis of the brand’s mission and essence.

Its origins date back to the 1970s, when partners of a steel company in Brescia and an engineering company from Veneto identified the opportunity to reuse residual heat from steel production to optimize fish farming.

This led to a groundbreaking achievement: the integration of industry, aquaculture, and surrounding agriculture in Italy — a true model of responsible water and energy use.

Through a heat exchanger, thermal energy from the steelmaking process is transferred to the pure spring waters flowing within the property, creating an ideal habitat for various premium fish species.

In 2021, during the renovation of the hatchery roof — a 5,000-square-meter building dedicated to the early stages of sturgeon breeding — a photovoltaic system was installed, making it energy self-sufficient. A second photovoltaic system is currently under construction, with the aim of doubling internal solar energy production.

Agroittica operates two facilities in the municipality of Calvisano, in the province of Brescia, covering a total of 60 hectares of fish farming area. This is complemented by the facility of its partially owned company (50%), Storione Ticino, located within the Ticino Natural Park.

Agroittica produces the widest variety of sustainable caviar in the world and represents a benchmark for quality within the industry.

Continuous Innovation, Research, and Care

Agroittica’s original experimental approach has continued to guide the company over the years. This has led to the introduction of groundbreaking innovations within the sector, including advanced systems ensuring complete hygienic control of the production process.

Caviar is extracted under the protection of laminar flow hoods and processed in specialized clean rooms using technology similar to that of operating theaters, where sterile air overpressure and strictly controlled temperatures preserve the quality of the precious roe.
