Company Description

The farm extends over more than 140 hectares of hilly land, forming the heart of its productions: sheep’s milk, extra virgin olive oil, and wine. The landscape features a steep ridge surrounded by medieval villages, woodlands, streams, and olive groves. The soils are mainly clayey and stony, and crop distribution follows the natural vocation of the land: olive trees grow in the harsher areas, vineyards on the steep slopes, and the gentler hills serve as pasture for Sarda breed sheep.

The vineyards are spread across several plots and include varieties such as Sangiovese, Vernaccia Rossa, Vermentino, Ciliegiolo, Trebbiano Toscano, and others. Cultivation follows minimal intervention practices, using only copper and sulfur permitted in organic farming. Harvesting is done by hand, usually starting in early September, depending on the ripeness of the grapes.

The winery, recently built, is dedicated exclusively to the vinification of estate grapes. Both white and red wines undergo skin maceration, with fermentation and aging in stainless steel and fiberglass tanks. Wines mature for about six months before bottling, and some undergo bottle refermentation using must from the same harvest.

The olive groves are another key feature of the farm, with many centuries-old trees already recorded in 18th-century maps of the Papal States. Cultivation follows traditional methods, with no chemical treatments and only organic fertilization.

Overall, the farm integrates livestock, vineyards, and olive groves, enhancing the territory and landscape while following environmentally respectful farming practices.
