HISTORICAL NOTES
The winemaking tradition of the Cantine Daffara & Grasso has its roots in time.
In fact, the partners all come from families of winemakers who have been producing quality wines since the beginning of the twentieth century.
Since 1981, the destinies of three families of winemakers have intertwined: Angelo and Roberto Daffara and Ermes Grasso, combining experiences, stories and traditions in a single activity of production and bottling of selected wines.
The Cantine Daffara & Grasso company is born.
Currently, the sons continue with the same enthusiasm and commitment, blending experience with innovation.
Located in the heart of Calosso, a UNESCO World Heritage Site since 2014 for the cultivation of Moscato d’Asti, the flagship of the company’s production together with other traditional Piedmontese wines, the company embraces cutting-edge processing technologies while honoring traditions.
The company processes grapes from its 25 hectares of property and also from grapes supplied by local winemakers who have been linked to the company for years of mutual trust.
With a total storage capacity of 26,500 hectoliters, of which 16,500 are temperature-controlled units and 1,200 hectoliters of autoclaves, the bottling line boasts an average production capacity of 3,000 bottles per hour.
THE TERRITORY & MICROCLIMATE
Our winery is located in Calosso, in a prime position between Langa and Monferrato, two of Piedmont’s most prestigious wine areas and UNESCO World Heritage landscapes.
What truly defines our wines is the proximity to the Alps.
The Alps create a natural barrier that protects our vineyards from cold northern winds and generate significant day–night temperature variation.
This Alpine influence allows us to achieve:
Optimal grape ripening during warm, sunny days
Preservation of acidity and aromatic intensity thanks to cool nights
Natural vineyard ventilation, reducing humidity and disease pressure
The result is wines with vibrant freshness, aromatic precision, elegant structure, and refined tannins.
Our calcareous and marl-rich soils further enhance structure and minerality, creating balance between alcohol, acidity, and texture.
Each vintage reflects the interaction between soil, Alpine microclimate, hillside exposure, and human expertise.
Our wines are the pure expression of a unique Alpine-influenced microclimate — a key element that distinguishes them in the international market.
PHILOSOPHY
Our philosophy is to let the unique characteristics of the land shine through the distinct traits of each vintage. The limestone-rich soils produce wines with a strong structure, delightful fragrance, and elegant profile, striking a harmonious balance between alcohol, acidity, and gentle tannins that enhance the overall pleasantness and drinkability.
Every bottle captures the essence of our terroir, narrating a one-of-a-kind tale that mirrors the climatic and geological intricacies of the specific year it was crafted.
Our dedication to sustainable viticulture underscores our commitment to environmental stewardship, allowing nature to influence our methods and safeguarding the biodiversity of our vineyards. In our winery, we blend tradition with innovation, fusing time-honored practices with modern technology to meticulously produce wines that are both genuine and visionary. We view winemaking as an ever-evolving journey of discovery and ingenuity, marked by meticulous attention to detail and a profound respect for our heritage.
Whether savored young or aged to perfection, our wines offer a delightful experience that captivates the senses and fosters a deep connection to the land of their origin.
