We select year-round Truffles according to seasonality each with unique organoleptic characteristics and scents; going from the most prized and well-known Alba White Truffle (Tuber Magnatum Pico) October/January, to the various species of Black Truffle such as “Pregiato” Black Truffle (Tuber Melanosporum Vitt.) December/March, Summer Black Truffle (Tuber Aestivum Vitt.) May/September, and the “Uncinato” Black Truffle (Tuber Uncinatum Chatin) October/December.
