Company Description

Founded in 1971 in Ferrara, Italy, Vassalli S.r.l. combines craftsmanship and innovation in the production of high-quality frozen bakery products. What began as a family-run bakery established by Olivio Vassalli and Patrizia has grown into a solid industrial company, maintaining strong family values while embracing advanced technology and international market development.

Vassalli offers a portfolio of over 50 frozen products, including bread, focaccia, pizza bases, pizza dough balls, and specialty items. Its iconic products, Pane Ritorto and Bauletto Ferrarese, represent the company’s heritage and commitment to quality. Products are available both frozen raw and pre-baked, ensuring flexibility for retail and food service customers.

A key milestone in the company’s growth was the introduction of cold baking technology in 1998, enabling expansion beyond local markets and positioning Vassalli as a reliable partner for large-scale retail (GDO) and the HoReCa sector. In 2021, the company achieved IFS Higher Level certification (score above 98%), strengthening its presence in international markets including Switzerland, the United Arab Emirates, and the United States.

The company operates two industrial production lines with a maximum capacity of 2 tons per hour and processes over 2,000 tons of wheat annually. The “Filiera Vassalli” project ensures a 100% Ferrara-based supply chain, from locally cultivated wheat (over 250 hectares) to final bread production, supported by full traceability systems and rigorous quality controls.

Vassalli places strong emphasis on sustainability, investing in renewable energy through a photovoltaic system (operational in 2025), using bio-based packaging materials, and implementing waste recovery systems for biogas generation. The company also promotes social responsibility through employee training and local community support.

With over 40 employees, 50+ active SKUs, and partnerships with 13 retail chains, Vassalli represents a modern Italian bakery company that combines tradition, technological innovation, sustainability, and reliable industrial performance.
